Pan Cyan fruiting Q

So I have some agar slides of Pan Cyans I want to try growing soon, but I've been a bit hesitant to try since I don't have a good set up.
I have plenty of tubs (Example) that I use for bulk cubes, but I don't want to try using them for bulk pans since getting the FAE on the cubes is hard enough as it is. I've also heard Pans are very temperamental about enviro variables, so that is why I've been leaning on trays more than tubs. The problem is that martha stewarts aren't common here and there is some equip. I'd have to get as well to go along with using one that I don't want to get for as often as I end up growing (read: not often).
I had an idea though that I wanted to run by some of the people that have grown pans before. Looking at the pics in the link above. I was thinking about taking 1-2 of my tubs and flipping it upside down. Then get some small-ish Tupperware containers and spawn into those and put the containers in the inverted tub. I'd punch some more (smaller) holes in the upper part of the tubs to add more FAE. It'd look like a hybrid shotgun style container afterwards. Hopefully I wouldn't need perlite. The Tupperware would sit on the lid.
Would this work out well? Or is there something I'm missing?

You can buy the Marthas on ebay for pretty cheap. You can also make a mono with some horse poo/coir/verm. Just make sure to make the substrate really shallow and same for the casing layer (around 1/4 of an inch) and you should be fine. They seem to really like grass seed
You can also just case your grains in a tray and fruit it in a sgfc. Just remember to make the casing layer really thin.
