Looks like metabolites, which mycelium produces when there is bacteria present

That is metabolites, and usually points toward a bacterial contamination.

Do you remember how much water you put in? Too much water is a good chance of contam. But all of the Mycelium is on the bottom which leaves me to believe the water settled at the bottom.

I just flipped the jars upside down.
I used 2 cups of brown rice flour, 2 cups of water, and 4 cups of vermiculite for my jars.
Any ideas about how to save these guys or is it too late? All 12 jars are showing signs and there is a lot of condensation. Could I open the jars and try to fruit them? They all look about 90% colonized and I see pins on some of them.

Yes there is a dry layer of vermiculite on top.

They look colonized to me. If there are pins definitely fruit them asap. Bacteria might win the battle or it might not, but either way fruit them and find out(the ones that are 100% colonized)

Dunking them should probably rinse off any metabolites on the outside without you having to rub them

Hydrogen peroxide can be useful on live mycelium. I have used a spray bottle to mist a contaminated petri dish, and the myc eventually grew right over the possibly dead contams with vigor. I would try a light mist directly to the cake. Dunk in cold water to slow bacterial growth.

Peroxide damages Myc, and can slow/stall Myc growth. The only thing it's good for is killing Cobweb when it comes to dealing with Contams.

There is no doubt that myc will be damaged as well, but it is much more resistant to it than bacteria is. The H2O2 will burn the myc, but it is resilient enough to spring back quickly.
This same concept applies to the human use of hydrogen peroxide.

Don't flip the jars!
And if your worried about contam just fruit that cake in the jar bro. That way it's out of your SGFC, and won't spread to anything else. You'll still get some mushrooms but wo risk to the rest of your grow. Fruit it invitro in a separate room.

I birthed, dunked, and rolled my cakes on 9/20 and placed them in my SGFC on a bed of wet perlite. It's been 3 days and the only difference I have seen in the cakes is they are getting whiter...not sure if this is mycelium or cobweb mold or some sort of bacteria... I am getting a little worried about these guys. Thinking about dumping them and starting fresh--what do you all think? There IS a little mushroom head pinning on one of the cakes, very small (last pic) but that's it

They're looking good to me. Definitely don't throw those out.
Also, you mentioned a single pinning mushroom, but what are those three in the second-to-last pic? Dont see heads on them, though.
