The left side has a weirdly white patch. Seems eerily similar to trich, as I've had it before in a tray.

I dont see anything odd, except its not colonized 100%. What is your substrate and are you using a casing layer?

By taking it out you effectively told it to fruit. Evaporation and FAE is a pinning trigger, you're supposed to leave it till it gets 100% colonized on top before exposing to any air.

ive been told you can open up monotubs and peek at growth wouldnt it be the same for trays?
and the tray has been opened previously and its still growing.

It will still colonize some, but it will pin early. The main pinning triggers are FAE and evaporation. By constantly exposing your tray to air the sooner it will start to pin and colonization will slow down. Colonization still occurs even after harvest. When you cut at the stump the stump will eventually cover over. If spores drop on the substrate eventually those spores will germinate and start new colonization over the old substrate.

oh okay. =//
that means i wont open the other tray. i have them in my TiT and they are evaporating should i remove them?
also when it comes to fruiting "mush4brains" said just to stick them out in open air with wax paper on top. do you recommend that also?

I would remove them from the TiT as long as it is in the high 60's to mid 70's in your grow area. Even if it drops at night to low 60's you're fine - it just takes longer to colonize but you wont have the evaporation issues from the TiT heat.
Well, if you don't want to make a fruiting chamber you might be able to adapt the lid to provide more FAE when you are ready to pin. I would be a liar if I said I never used wax paper, but you have to change it every 2 or 3 days due to how wet it gets. It also stressed the shit out of my mycelium as it can cause excess moisture build up resulting in metabolites. Additionally the cost of a tub to make a fruiting chamber is cheaper and more reusable than the cost of 2 rolls of wax paper.

An ounce per quart of spawn with an untested MS grow and shoddy at best conditions? Good luck.
I'd be happy with a half ounce out of that.
