Me too, I will admit. Although more than that, it's the bugs.
First lobster mushroom the other day, it was amazingly delicious, but I constantly wondered how many bugs I was actually eating (after how many I knocked off and cut out). That's why these are so awesome, first mushroom find ever with not the slightest hint of bugs.

that just protein
in fact theres a very large idea in the food movement to switch over from cow/pig/chicken production to bug production as a renewable source of protein
it can be done on the micro scale with low tech and cost for a very high yield
and the insects themselves carry a much higher protein/essential nutrient ration than red meat and the amount of time/food/energy/money you put in makes bug consumption something like 8,000 times more efficient.
if we removed all the factory farms in this transition and substitution, we would be saving the soil from factory farm leakage and contaminants, lowering the carbon impact of shipping these animals large distances, and make pharmaceuticals cheaper as something like 80% of all drugs go into keeping animals semi-healthy before slaughter as they are dying on a corn fed diet which is not what they are meant to consume.
this would in turn cause the far more preferable local and more natural methods of animal rearing. local farmers going back to raising animals fed on grass and selling them for much higher costs than corn fed animals. which in fact aren't really higher costs, they are actual costs of what meat should be when raised naturally and in coherence with their biology. yes you are paying more, but for a better product that doesnt contribute to subsidized corn, agribusiness, and the fast food industry (who make it seem like meat should be a cheap and readily available commodity).
so basically what im saying is quit being a prude and eat your bugs. theyre good for you

Haha, yeah I agree I was half joking about the bugs. I consume quite a few, mostly from my outdoor grown oysters which get worms from the day they pin out there, there's no avoiding it. I'd rather cook well and eat 'em than throw away pounds of oysters.
Nice to see someone so educated on the environmental implications of the meat industry. Other than the bugs, I've been vegetarian since '08, for just those reasons. If I can't raise or catch it myself I'll pass.
That's one of the reasons I'm so excited about mushrooms, they're really a great meat replacement for someone who's gone veg. Bugs? Yeah, maybe I'll get there.

cooked em like my fave eel recipe
quicke saute in olive oil. put em aside. (they absorb hella oil btw so i had to add more than i would for the eel)
add capers, crushed garlic, red pepper flakes, bay leaves, minced anchovy (again had to add oil bc they mushrooms absorbed it all)
let simmer for about 4 mins
add 1/4 cup white wine
let simmer for 3 mins
re-add mushrooms
cover and stir occasionally for the next 5 mins
BAM! they are delicious too!

Yeah I've heard of fresh freezing before cooking, as well as sauteing and then freezing, but haven't tried either yet. Local guy says they're good in the fridge for like a week.

Keep in mind cumulative possibilities... No need to over do it.
Cook and freeze your excess in portions, for enjoyment later in the year... I recommend vacuum-seal after a dry saute.

yeah i ate too much. im kind of tired of it. plus it absorbs so much butter/oil
i was thinking of baking some but now that the weekends over i dont have time to cook it fancy
prolly just gonna toss it by the maple tree and pray it slowly kills my maple like the delicious parasite it is

You don't have to cook mushrooms with oil.
I never use oil in cooking, maybe next time try sautéing in vegetable broth or water sautéing. I would use chicken of the woods by water sautéing with onions and spinach. Top with chickpeas. Yum. Also very low fat and high nutrient density.

Exactly.
Or use nothing at all, rely on the moisture locked inside the mushroom... this is what a Dry Saute is... Non-stick pan is going to be the best, medium high-heat... cut the mushrooms to your liking, chunky slices are good (1/2 inch - 1 inch thick)... Once pan is hot, toss them in... Don't let them sit too long, keep them moving.... they will excrete their juices and cook in them for several minutes... eventually there is a point where the mushrooms suddenly reabsorbed whats left of their juices... shortly after that they are done.... depending on the quantity and type of mushroom, this method takes about 6-10 minutes.
My favorite mushroom cooking method.

i know chants do that, but i didnt read anything about chickys doing that. all the recipes and methods i saw suggested butter and oil.

You can dry saute most mushrooms... when getting to fragile and brittle gill varieties, etc, its mostly an issue of sticking to the pan or holding their shape/falling apart... thus why using a good non-stick pan is ideal... lower the heat for the more fragile ones, a good way to go too... and if you do resort to adding water, broth, oil or butter, you don't really need to add much.. if you use oil and butter and find yourself needing more than just a little, just keep adding splashes of water to the pan until cooking is done, just to keep them from sticking....
Experiment, you'll learn via trial and error... that's how I learned. (To Cook)

Tossing them in oil in butter first may be a way to limit the amount... get them coated, then let the excess drain off before putting them in the pan... then use a tablespoon of water at a time as you cook if they begin to stick too much... keep them moving!
