Any gourmet cultivators sell to markets or chefs?

I'm just wondering how many gourmet cultivators here sell to markets and chefs. What kind of government regulations are in the way of doing this? Tax, FDA, local, etc... and liabilities. I would consider bulk growing edibles on small scale if regulations haven't ruined yet another sector.

Well having worked in the restaurant biz  for several years if the chefs you sell to trust you you could probably sell to them with out all the red tape. I had plans on doing a small scale grow of Beeches, Lions mane ,Enoki and Poplars . I am pretty sure I could make an extra couple a hundred a month. But yea you could pull it off on a small scale flying under the radar even at farmers markets. I tried to use cube methods like shotgun trays but my yield was to small. But I bet you can pull it off. But you ain't gonna get rich just look at it as a little supplemental income doing it part time as a hobby. Good chefs are always looking for something new to work with. If you're sure your setup is clean and you sell good product you would never have problems with liability and as far as taxes it would be all cash. IMHO .

good to know. It's less about money and more about using skills to keep things local and out of the hands of people who practice irresponsible measures.
