care to shed some light on my grow operation?

So let me first run you through the process I began at the beginning of this summer:
My first cultivation attempt with oyster mushrooms began when I found an older inedible oyster cluster while on a hike. I took the specimen home for the sole purpose of cultivation as it wasnt good to eat. I sliced very thin portions from the base of the stalk as thin as my knife would allow and placed it in an open plastic container consisting entirely of extremely hot coffee grounds and filters.
I had read a little except in Mushrooms Demystified about oysters being able to grow solely from coffee grounds and thought this might a step I could skip (one of many steps i skipped) in my cultivation process.
I Made a base layer in my plastic bin (btw this was a hospital pink hospital bin about 1 foot long be 8 inches deep by 6 inches tall) which I had washed out extremely well with scalding hot water and cleaner.
I skipped the step of microwaving the grounds and strainer as they came straight form Peet's coffee and were still steaming when I opened the bag.
I made a base layer of grounds and filters and placed my thing oyster stalk slices below the filters. (this is because I skipped the step of cultivating the mycelium on wet corrugated cardboard) and figured wet coffee grounds would do the trick in the substrate itself.
i made another layer right on tops of this following the same method until my bin was mostly full.
I left it in the garage and would spray it with distilled water occasionally.
THEN I was curious as to how it was doing about a month later so I checked my digging through with some gloves and sure enough my mycelium was thriving throughout BUT it was also infested with maggots.
Because it was in the garage and the cats are in and out al the time we leave the door open and hella flies get in. What should i do differently to to bug proof my next attempt? I ended up tossing the whole batch because when they did fruit they would just be eaten alive by maggots. How can I bug proof my grow? Should I add other ingredients to my substrate or is 100% coffee grounds a feasible method for getting some fruiting bodies?

Everything is wrong with this except growing oysters on pure coffee grounds. Look at one of the many teks here and learn how to grow properly then worry about the bugs if they consist. They shouldnt though.
BTW why the fuck would you want to grow an inedible mushroom? Why not something that is worthy of eating?

inedible in the sense that it was old and leathery. as in not an ideal ripe specimen

Ok. your starting from over extended mycellium that is dieing so another error for trying to grow. It wouldnt matter with oysters so much though. Everything else is shady on this grow though. Look at one of the million teks on here start with cakes and go on. Watch me
