some of the oysters I sauteed and froze the other day cooked up with a nice big steak tonight :wink: good shit!

Those oysters are just so clean looking...  Are you brushing them off or washing them?

I rinsed them off while thumbing them like I do fish fillets when I bring them back from a trip. I barely had to remove any bugs in them it was very nice! I heard water is not the way to go but Im confused. Doesnt it rain on mushrooms all the time? Also dont you basically drown them in liquid to cook them? Ever mushroom Ive ate from the wild this year I have cleaned under cold water and they turned out just fine :wink:

I used to wash the hell outa everything, too.  ;-)  I'm a bit more relaxed these days, I'll brush off the chunks and use a finely serrated knife to scrape stuff off if necessary, but I hardly ever run water over them.  Depends on the shroom and how close you are to cooking it, but I find that they are full of moisture as it is, the addition of more just results in overcooking to get rid of it...  And some, like agaricus are almost like a sponge.  I'm absolutely convinced it shortens their keep, so if I have to wash I do it right before prep.

Lobsters or cauliflower are another matter...  The lobsters are so dense they don't seem to soak up much water, and they're generally really dirty here, same with cauliflower, have to use running water to dislodge all the stuff stuck in there, doesn't seem to be any other way.  I don't mind a tad bit of sierra seasoning, but whole pine needles and dirt chunks are not to my taste.

I hear ya Fryday:mushroom2: I just barely turn the water on and drizzle them while brushing them off. I cook them immediately then freeze as you suggested once to me. The oysters had a very rich flavor and sorta slimy texture but it didnt bother me. reminded me kinda like ochre.

I doubt that but you have to understand I have more time to hunt. Im also a loner so that frees up a lot of time.

I don't bother washing anything to be honest. I just rub the dirt off if there is any. Some mushrooms can be washed without soaking up water. For some it's a disaster. Russula's don't soak up any water for example.
I've also still never seen Oysters in the wild. Now that I've said that I'll probably find some tomorrow. It was a similar situation with Chicken Of The Woods.

TY Untitled. I hope you do find you some oysters in the wild! Were gettin lots of rain where I am. Cant wait to see what pops up! I am not brave enough to eat them without washing them yet lol. I dont think I could eat one raw yet either. All those bugs that bore their way into the shrooms where you have to cut them out. Nothing wrong with extra protein I guess lol.:mushroom2:

I wouldn't eat Oysters raw to be honest, too chewy and don't taste good.

the first time i found chanterelles i got about 5 pounds of them. on the west coast they grow out of really thick and muddy duff, thus the term "mud puppies". they took me about 4 hours to clean them all properly and i bit my lip when i eventually conceded to washing them. i gave them a quick cold rinse and immediately dried them off with paper towels. made some really good soup with them.

The west coast chants are horrendously muddy:









took me hours and hours to clean them properly. I really tried to avoid putting water on them but I hadn't I would've just been eating a ton of mud

Dang I know what you mean on the if hadnt put water on them thing generalsherman55. Nice pics! Ive spent hrs cleaning little bluegills after fishing just for a couple people to eat. It can be grueling! Ty for your info!:mushroom2:

i immediately wrang them out with a paper towel so as to prevent max absorption by the chants (although they act as sponges so that might have just been wishful thinking on my part)

then i dry sautéed them in the skillet so they would release their mushroom water (this part took like 25 mins or so because i had about 5 lbs, whereas the books said this process would take about ten) but then again the process might have taken longer because i had to wash them all.  Once they had reabsorbed their liquid i added them to my roux for my soup.
