Homegrown WBS

This spring, I tossed a handful of WBS into my garden. Now I have mature red and white Millet (Red Millet is a beautiful plant btw) and Sunflowers.
I did a search but couldn't find anyone else doing this. I've got a lot of questions.
Best time to harvest?
Drying/storing advice?
Recommendations on mixes?
Any other suggestions?

I think i've been mowing over Sorghum, possibly millet, a whole acre..man. I've been wondering some of the same questions about recycling some vines and such from the garden.
For the millet cut it when the top half is done, should be brownish, just hang it to dry, it'll be labor intensive to do a whole lot, threshing seeds can get tedious. anywho that's all i'm sure of. Curious about the rest.

Get a horse, feed it a good diet and let it shit in your pasture.
After a year of aging in the field, gather and prep for cultivation.
Or you could do straw.

I agree, red millet sure is beautiful. Shame it's so much work to turn into usable grain.

Hello Mr. Horrigan,
I was just reading your wonderful series on how you get shit done. Love it. Thanks so much for posting that!!!
I do not have horses, but I've got 6 sheep and a goat. Their shit (and piss) is well mixed in with straw in their barn (which is actually in need of a cleaning anyway) and there is also "aged" manure which has been piled up in a few places around the property. It has been sitting outside so it has started to compost. I'll take a few pictures later this afternoon.
In your experience, does manure have more contamination than other types of substrate? It seems like you favor coir in your write-ups.

If your manure is properly pasteurized it shouldn't be a problem. But year Coir is definitely more contaminate proof.

Here are the shitty pictures I promised.
The producers:

The aged outside (which obviously supports mushroom growth!)

A closeup of the mushrooms (I believe these are Galerina marginata?):

They had a light brown spore print, did not bruise blue, and did not have a separable pellicale. As you can see in the photo, they are growing directly in the year(ish) old compost.
