PE tray, 7 days in.

Just looking for reassurance as I am new to cultivation. I have my first PE cake ever. It was spawned from three 1/2-pint BRF cakes to pre-pasteurized manure (ordered online) at an approximate 1:3 ratio.

Here it was at 80% colonization:

It's been in my FC (shotgun) for about 6 days now between 65 and 80 degrees F and at 100% RH. I've been fanning 3-5 times daily and running a fan in the room to circulate some air. I had it exposed to indirect sunlight, but I felt like lighting was getting heavy so I covered 3/4 windows with sheets to bring it down to a pretty ambient setting (you can barely make out details of appearance of cake now).

I did not dunk the cake, I did not apply any casing, and I have not directly misted the cake at all. There is a small pool of water forming on the plastic bag it is sitting on top of (don't know if this is good or bad... supplying needed moisture or excess unneeded moisture?) I have read so many different things on keeping cakes hydrated that I don't really know what to do.

Here's the FC:

And here are a few pics of the cake about 10 minutes ago (6 days of FAE in the FC):

I think it looks to be right on and hopefully those are lots of knots forming (they have not broken the surface yet and I will feel much better once they do). Until then I'm stuck literally lucid dreaming of pins and colonizing jars (kinda messed up, right?).

Im not an experienced grower but standing water is a breeding ground for bacteria. Condensation on the sub I've seen advice of soak up using a paper towel to leave it. Ill be following along Ill be starting some PE shortly.

Condensation on the substrate is normal, polling water is not good.

If there are pools or puddles of water, soak it up...other than that tiny droplets on the substrate are normal.

Good luck with your PEs man. I'll keep updating on my end.
I started spawning 3 more cakes to a manure/verm mix about 60 hours ago. This time i rehydrated/pasteurized it on my own in some 1 quart jars and colonization seriously exploded in like 8 hours! It already looks like its at 80% and the mycelium looks absolutely beautiful through the sides.
Cake is gonna be humungo.
