Question about misting

Ive two Qs:
1-The reason for misting is so that the perlite absorbs it and through FAE evaporates that mist and turn it into humidity correct?
2-Also wen one mists a FC with the fruits in trays not directly touching the perlite shud one remove fruit trays and then mist the perlite inside the FC/bin so as to avoid getting any mist on top of fruits? (Since water is no good for fruits) OR its not necessary to remove trays from bin while misting?

nah man, the fruits love water. Another reason for misting is to replace lost moisture from the substrate.

Incorrect..... - We mist to replace lost moisture in the substrate, you should also mist the perlite, but it does not get absorbed into it, it merely coats the perlite's surface.
Mist the cakes directly with a fine mist until they glisten, then fan out the chamber.
Perlite is a porous rock, and the water evaporates slowly off it due to it's large surface area.
We fan after misting to make room in the chamber for evaporation to take place.

Mushrooms are 90% water, where on earth are you getting this bogun info that water is bad for them?
When it rains in nature the mushrooms don't die....when we dunk the cakes with pins on them they do not die....when we mist them they do not die.
Do not remove the cakes, mist them while in the chamber, the perlite should get wet from this....
