Following a TEK, want to get the 'fruiting chamber' right...

Hello! This is my first time growing mushrooms, as where I now live the spores are legal and easily obtainable.
I have decided to follow this guide: http://www.shroomery.org/8410/Simple-Cubensis-Growing-Technique
I have gathered almost all of the materials and hope to begin the process in the next day or two.
I have studied this guide and few others extensively and feel I have a grasp on most of whats going on, what is crucial, and what has to be done.
Now, the trickiest step it seems is the fruiting process, as stressed in the guides and by the many posts on this forum section, it seems a lot can go wrong here.
Today I went to the store and bought a large, clear rubbermaid bin with a top that locks with two rubber handles on the shorter sides.
I poked holes in my jars (nothing in them yet) and all 12 fit in the bin just barely, but cleanly.
This guide I am following insists my chamber to be 6"-8"s tall (15-20cm). The height of my bin in 5.3". Is this sufficient? Or is it necessary that I get at LEAST 6" tall? I'd rather not make the massive trek by bus back to the store I bought it at, assuming I still have the receipt>_<
This bin's dimensions are 16.7x13.3, filled with the 12 standard 1/2 pint jars, is this going to be too crammed? considering the spore syringe is labeled "mystery fatass"
I'd rather not have to go hunt down a different chamber as my transportation is rather limited at the moment, but better safe than sorry with something like this I feel.
Suggestions?
(Also, off topic but, when cruising the forum, I've noticed when people post pictures of their indoor grown shrooms after they have been harvested, it appears they have been pulled out of the cake entirely, "roots" and all. This puzzles me because I've heard and always practiced when hunting wild psilocybes, to always cut or carefully tear the stem away and NEVER pull up the entire mushroom as this hurts chances of re-fruiting. Is this different with indoor grown cubensis?)

I suggest you follow this tek and build a proper SGFC, which will work a lot better for fruiting.
www.mushroomvideos.com
No, the tub should be big enough to hold 3-5" of perlite, and have room for the cakes to sit in there, and have head clearance for mushrooms to grow.
So no, the fruiting chamber should be at lease double, if not triple that height.
A proper SGFC has 1/4" holes drilled every 2" in a grid pattern on all 6 side(top and bottom included), and is filled with 3-5" of moist perlite.
In a room with no fans, the natural air currents will give the cakes constant FAE wile maintaining the highest humidity possible...it's a beautiful thing when built right.

Yes, most of the details are written out right below the preview-sized version of the video describing what you are asking about =P
