fermenting jars

I packed my jars with verm/BRF and i couldnt sterilize them immediately. Its been about 3 days and they now have a sweet smell to them. Im assuming from reading about fermenting jars here, that they have started to ferment. What i havent found was, has anyone come to a conclusion if they will still grow mycelium after PC'ing? I looked at all the posts on fermentation, and noone had a real answer.... thanks ~MC

Have u ever had fermented jars before? They have a smell, but they dont stink. Im looking for people who have had this problem before and kept the jars and still innoc'd them. Did it work? ~MC

No, but my friend has. And he took my advice and tossed 'em.

PC it...They will be fine. The bacteria endospores have germinated and that's the smell. The PC will kill them.

How long would you recommend PC'ing at 10p.s.i. to kill these endospores? The unsterilized jars dont smell that bad really, just a lil sweeter than usual.

15psi for 45-60 mins

I can only do 10 p.s.i :-( suggestions? cant find any precise info here about specific times...

hmmmm go for like 1 1/2 hrs then 2 10psi maybe? just a shot in the dark here.

my foafs pc hasnt got a p.s.i gauge it only has two settings on the handle,he pc'd for 25 mins on hi and it went fine.in the cookbook to use the pc it said cook on hi(1 setting) for chicken and meat(15 min) and the other low(2 setting) for reheating leftovers.im assuming if it was good enough on high for kill bacteria in chicken and pork its good enough for mushroom.at first he pc'd the verm/brf on high for 90 mins and it dried it up and it didnt colonize.but the second and 3rd time after pcing for 25 min it worked.on my foafs pc a little button on the handle sticks out when it is at the right pressure and then you start the countdown.goodluck!
