Because there's more air around the grains and air doesn't transfer the heat as well as the wet substrate in a PF jar.
That's just my theory BTW. There could be other reasons.

if you boil them they will take longer. if you have a pressure cooker they take from 60 to 90 mins
as for why? probably something along the lines of what kizzle said. along with the fact that grains are more dense than BRF.

From reading here a while I've noticed that there are a lot of faces that only show up in mushroom cultivation and a lot that show up only in the pub or other threads. This forum is definitely bigger than mushroom cultivation. As of this writing there are 190 users reading the pub compared to 66 on the cultivation forum. Just saying, you could easily spend 3 years here only talking about using psychedelics and never really concerning yourself with wanting to grow them yourself. Not that I don't think these questions being asked are kinda ridiculous considering the versatile search function available. Just saying... Post count doesn't mean you know anything about growing mushrooms here.

Despite the fact that OP is acting as if everyone in Mush Cult owes him answers to all his questions, regardless of how rude he is or how accessible the information already is, let me offer one bit of info here that may not be made explicitly clear in the links that have been offered:
Boiling jars is not how we sterilize them. Even without a pressure cooker, you still want to sterilize using steam. For one thing, if the jars are in boiling water you'll risk water getting inside them and throwing off the moisture content of the substrate. But, also -- steam at any given temperature transfers more heat than water at the same temperature because it condenses.

Exactly we don't want the PF jars touching the water at all. The water should be under the jars.

What's wrong with water coming up on the jars? Also, I've been a member of this forum for close to ten years now. Only recently got into cult. Late bloomer I gather. Always had the intention, but, such is life. that and, time fucking flys. Lol.

I'm not seeking to be argumentative, especially in the face of more experienced cultivators disagreeing with me, but if the water touches the jars, less heat will be transferred to the jars in a given amount of time. The chemical phenomenon at play is called enthalpy of vaporization -- the amount of energy it takes to turn water into steam. When the steam condenses back into water on the jars, it releases that energy into the jars, thereby heating it up more than it would if it just were conducting heat into the jars the way water does.
The latent heat of vaporization is a lot of energy -- the rule of thumb is that 212-degree steam contains about 700% as much heat as 212-degree water.

If you are trying to say that this somehow effects the overall success of the sterilization session, my personal experience says that is bullshit.
I have had the water come 1.5-2" up the bottom of my grain jars in my PC, and have not seen a mass contam from it.
I have done the same thing with cakes, and so have 1000s of other people.
Just sayin, you are thinking way too hard about this.

as long as you reach the right temp it really doesnt matter how you do it.
