Stunted King Oysters?

So I've been producing King Oysters pretty steadily for a little over a year now, and just started having a problem a couple months ago that I can't figure out.  All of a sudden, the mushrooms stopped growing into fully formed monster near-half-pound beauties and instead were stubby little 3-4 inch cone-shaped things with teeny teeny little caps.

I knew it wasn't humidity or temperature, because nothing about the grow-tent had changed and it was still at appropriate levels.  So I thought maybe it was moisture of the substrate, so I started adding slightly more water when mixing it up, but that wasn't it. 

So then I thought maybe the culture was getting old, even though its not very old and I've kept it within the first couple generations, always making fresh master jars of spawn from agar.  And I started making up fresh spawn from a different culture.

But while that was incubating, I made some bags with the same sawdust I'd been using that was supplemented with spent brewer's grain rather than wheat bran which I'd always used.  Lo and behold, the mushrooms from the same culture that spontaneously stopped growing well on sawdust/wheat-bran were suddenly producing nice-looking mushrooms like before but only when supplemented with the brewer's grain.

So the mushrooms are getting plenty of FAE, humidity, temp is in the right range, culture is good, but I'm still getting stubby ugly little fruits off the same substrate that they used to do well on.

Any possible ideas what may be happening?  Could this be a problem of lighting, substrate texture, or pH?  The mushrooms that are growing look identical to the ones pictured here:

Sounds like something has changed with the sub - different sawdust, or the bran might have been changed (origin/age/treated) without any notification on the bag- can you remember if the problems started with a new bag of bran? Alternatively you might have bacteria living in your bran if it got at all moist.
