The soak is for hydrating the grains, so I would say it is very essential. The simmer is to warm up the grains, so the moisture on the outside evaporates and gives a good hydrated grain that is dry on the outside and does not stick together in the jar.

The soak hydrates the grain and makes them a bit softer which helps avoid burst kernels during the simmering. After the simmering and the grains are in the strainer, you shake to get the excess moisture off the outside of the grains.

The old way from years back where we would simply put the grains and water in a jar and then toss it into the PC resulted in a lot of busted kernels and spilled starch. RR

I doubt you can hydrate your grains just by leaving them in water, after 24 hours they might have absorbed 1/4 of the water they should and by then your bacteria is growing wild

a simple task: observe the diffrence in volume after soaking and after simmering, i belive this will convince you if we fail cuz i dont feel like teaching people too much when they can do the research on their own (no offence meant). grains get dry because they are hot, wet hot things dry faster, i agree with this, but this isnt the reason of simmering. soaking is for bacteria (or endospores, i dont know the right term) to germinate. this is apperantly needed to kill some organisms that can survive pc if you dont soak. but if u search a little you will find RR saying what i just said.

They both hydrate the grains, but simmering hydrates them far more. Soaking also germinates endospores. Soaking also softens the hull so it doesn't burst during simmering. Soaking also allows you to add gypsum so your grains don't stick together after simmering, while also providing nutrients.

You can if you like doing things the old school way. None of us will recommend it.

if you dont want to risk contams or wait longer for full colonization than soak and simmer, do what tek says, improvising on your own without much experience isnt advised.
