You should leave them alone until colonized. Moving them disturbs your dry verm layer which protects your cakes.

Stop picking them up, stop smelling them. Wait till either a - you get visual signs of contamination or b - they are fully colonized. It's too early to tell if you have bacteria through smell, for all I know you could have bought butter flavored brf. Use the search engine and start learning about signs of bacterial infection.

Personally, if I smell anything other than mushroom and/or substrate, I toss it.
Any other smell is not a good sign. This has been my own experience, anyway.

It's also only 5 days after inoculation. If it was mold he most likely would see it by now and if it was bacteria there is no way it could produce a smell in 5 days. Top that with bacteria usually has a rotten fruit smell. Op will know once there is visible signs of growth as there should be the presence of metabolites with the budding mycelium should there be a nasty bacterial infection.
We can rule out mold, we most likely would have seen it pop up in 24 hours after inoculation and any bacteria is going to smell more than butter. Let's not make it's contaminated assumptions just yet.
Do some research on bacteria in mycology.
For all we know op could have gotten his jars from a butter churner.
Op, I'm usually the first to say toss it, I'm usually the one betting against people. If it were me I'd keep the jars a little longer. Brf can take up to 3 or 4 weeks for growth.

dont toss them just yet, even if you see no growth. I have inoculated cakes that showed no growth for weeks and then out of the blue, they germinated.
That butter smell might just be the smell of the cooked brown rice flour. dont worry about it yet until you see some growth

I used to handle my pf jars all the time, picked them up several times/day, looked at them, smelled them, never had any problems. Not recommending this, just sayin...

Bacteria smells sour/sweet/rotten , sometimes mildly sometimes intense (sometimes so intense you can easily smell them several ft away from tightened jar)
All jars may have bacteria without you can see it, but smell will give them away
Good jars smell so good you want to smell them again, pleasant fresh mushroom smell
Bad jars stick to the nose when you smell them, unpleasant smell, almost hurt your nose, don't feel like smelling again
Could be mold, could be bacteria... Wait like the others say, give it 2-3 weeks more / till you see visual contam then toss the jar, not worth opening it (or PC it before opening)
Never smell jars that don't look 100% colonized if in doubt, post pic, or toss jar

well like i said they smell of butter and sweat and maybe a lil sour Im just going to keep my eyes on them.Like there are no visable signs of contams. I have done lots of pf jars. With the same print put in ms syringe and they always start showing signs of growth within 7 to 10 days And as for the jars there new just bought from the store there half pints made like a 2 1/2 in deep by 4 1/2 wide with plastic heat proof lids. With four small hole for gas exchange covered with microspore tape. Then covered with foil. Im hoping that its just gas emitting from the cake. As I think RR had said before. Does anyone else want to chime in with there thoughs.thanks

I've got a batch of BRF jars that also smell like butter, like that awful popcorn butter they use at the cinemas to be exact. None of my other batches have smelt like this before. Its been 12 days since they were inoculated and I'll probably be tossing them this weekend (depending on how busy I am) unless they pick up their game. Out of 12 half pints, one has contaminated, and one shows a penny sized patch of mycelium that hasn't moved in a week. Worst batch ever for me

Mine are ALWAYS slow too. I have to wait for weeks on end for any mycelium to show up at all. Very exasperating.
