question on RR horse manure prep.

In the video (mushroomvideos.com) when he adds the grain spawn he says he is careful not to damage any grains because the center is not colonized.  If a fully colonized jar has been consolidating, does the myc penetrate and thus alleviate the need to be concerned about this?  I like to spoon out colonized grains spawn at times, but dont't want to increase contam risk.

I probably should have put this in the advanced board but I didn't think of it.

Also, I put 3 jars of horse manure into 3 quart jars with tinfoil lids, the top half of the manure jar reads 130f the bottom half, the part submerged in water, reads 160-165f.  So when the video says to turn it off at 140, are we measuring from the top or bottom of the jar?  Seems like it would be better to let the water come up as high as possible without going over the lip of the jar.

Also important to note that if you have a stand alone propane burner like I do it's essential to have it perfectly level, otherwise half the pot will heat up 10-20 degrees more than the other half..

In my not-so-expert opinion. Below 140 is very bad, and above 160 is bad but not terrible. If part of the manure is 180 and part of it is 150, the good bacteria will survive at 150 and should spread to the 180 part. But I'm pretty new that' just what I've read.
