Fruit flies on my drying mushrooms...

I'm looking for a good way to dry my mushrooms as they are attracting fruit flies that I am already desperately trying to erradicate from my kitchen.
Appearently I can not leave them in the open but they do need air refreshment in the drying process.
Any hints and tips?

It was a good harvest though, if I was a fruit fly I would have indulged as well...

If you can get one (and they are quite cheap) a dehumidifier is amazing! Chuck it in a cupboard or small room and they will be nearly cracker dry overnight, No heat and no chemicals My drying method of choice particularly when dealing with large amounts

Ah that's one of those things the raw food clan uses to make crackers right?
I wonder if the raw food explosion has made those more affordable or more expensive...

I think it's called a dehydrator.  A dehumidifier is an apparatus being used to suck moisture out of air. A dehydrator will evaporate the moisture contained in the mushrooms.

In that case you should look into fan drying. That is about attaching the mushies on the cover of a regular fan blower and letting them hang there for at good period.

Splitting the stems with a razor also helps to get moisture out of the middle of the mushroom. Just turn your oven on 200 put the mushrooms on a baking sheet, and leave the oven door open.

And that's 200 Fahrenheit, not Celsius. 
It's about 90-95ÂșC.

Of course, the oven... How could I forget about that friend.
Thanks guys, really helpful. I was never able to use the oven due to sharing a kitchen.
I moved however, my life is now so much easier

Okay so the oven thing seems to be working.
The stems remain rubbery in texture though, not hard as I have had them before...
The caps are rock solid however.
EDIT: They are getting there, I just needed more patience.
