Does this take any special equipment? I've never microplaned cheese into eggs before, pls enlighten.

Microplane
It is just a grater that grates things very finely.
Not necessary. Use a grater if you like. I just like how easily You can mix in a hard cheese when you use a micro plane. No big pieces.

Man... I might have to get up early (work at 5pm) and go look for some Chanterelles! I work at a certified organic co-op and we just started getting in Chanterelles from Oregon a week ago. I hope there's somewhere close to Seattle for me to hunt.
All you guys' finds & pics are giving me an itch that needs scratchin!

Very nice!
Tomorrow I shall cook with white wine and shallots. Maybe some cream as well. Poured over roasted Cornish game hens.

Ganzig: I would never wander the woods after dark! I meant leave town at about 8am or so and be back by 3pm. I've never looked for Chanterelles before (didn't have a car until this year) and although I know their growth habitat, I don't know where to drive to. I guess I'll just go to some hiking trails and wander off the path I've got a great internal compass.

Yeah, well it's pretty much forest everywhere! I was talking more of elevation and what's on the ground. I know they push up through moss so that's a starting point. Do they grow in dense forest or areas where trees are more spread out? Or does that matter?
Honestly, I think it'll just take a few expeditions and experiencing the areas for myself to "know". But I want to get on the right track and not "waste" much time since I have to do it on days I work before work.

Right now it seems that they are growing at all elevations. Well, that is based on a little experience and some words here in this thread from others.
Just go to a forest that has had rain. Walk and look for orange on the ground.
You will pass many but you will find, probably many, as well. But just remember that this is a really productive year. So, don't expect it to always be like this.
Last year was bogus. I found 14 chanterelles total. This year I have seen nearly 1000 chanterelles already. Not picked that many but nearly.

Dang man! You've got me excited. The funny thing is... 2 years back I saw a few growing in downtown Seattle near the waterfront. There's a 20' wide area of trees that sits between a sidewalk and bike trail that stretches for hundreds of feet. It's full of different trees and stuff. I saw yellow chanterelles there but wasn't confident that's what they were until about a year later :P
Same thing happened with me and morels. I looked for 2 years and ended up finding 2 in my YARD growing under lilac. No joke.
So yeah... I have weird luck.

After morning coffee I decided to figure out what an average chantrelle would be worth. I weighed 15 single chantys and got an average. Then an average price for somebody selling them. You know the rest.
Came out to about .12 each on average.
They look prettier then 12 cents and taste better too.

This year im gonna focus on finding my first chants and lobsters. My friend told me he found them all over a forest on a hillside near ferns and bushes in decaying branches and needles. Nice finds everyone!
