Harvesting bulk subrates mono tub

Hi, my monotub is ready to harvest as many of my shrooms has veil popped, but I wonder if I have to collect all of them or just those who are ready. Thanks :thumbup:

You can harvest all at once, or as they're ready.
It's all grower's preference.

Ok, thank you. I did harvest them with my hands, but I'm a bit worried about contams because little pieces of substrate went off the block while harvesting. Is my worrying justified?

You want to be sure not to tear up the substrate when harvesting.
It may cause contams to be able to settle in, but I highly doubt it.

Thanks for your questions.  Harvesting mushrooms is one of the most rewarding experiences you can have.  It is the culmination of determination, hard work, patience, and practice.

Do you have to harvest all the mushrooms at the same time from my monotub?
As soon as the veil separates for most varieties of P. Cubensis it is time to harvest.
There is a variation for some strains and clones but for the most part it is time to harvest when the partial veil separates from the cap.
The mushrooms on the substrate will tend to mature at the same time and can be harvested all at once.  On larger substrates or substrates that have not been exposed to uniform lighting or humidity harvest sections where the fruits have all matured.  You shouldn't wait for every mushroom cap to open but you can wait for one or two of the larger caps have the partial veil disconnect from each cluster.  Continue harvesting until the all mushrooms from the flush are harvested.  After harvesting all the mushrooms remove any aborts or pins.  After this the flush has been harvested.
It is highly recommended to provide uniform lighting, airflow, humidity, and temperature to each substrate so the mushrooms develop and mature together.  This allows them to all be harvested at once.  This raises the level of efficiency of the cultivation effort.

How do I harvest mushrooms in a monotub by hand?
When the mushrooms are ready for harvest pull and twist the mushrooms at the base to remove them from the substrate.  Some of the substrate will be attached to the mushrooms using this method.  The substrate can be carefully cleaned off using a scalpel.  Depending on the final value of the crop extra care (and time) can be taken to remove the substrate from the base of the mushroom or it can simply discarded (or set aside for an extraction).
There is a risk of contamination of the substrate.  To eliminate this risk a solution of clean tap water at a neutral ph and H202 (hydrogen peroxide) is used to spray the surface of the substrate after harvest.  The solution is created by adding 13ml of 3% Hydrogen Peroxide  that you can find at the drugstore to 1.3 L of tap water in a spray bottle.  The solution is shaken to mix before use.  The nozzle spray rate should be adjusted to both rehydrate the substrate and penetrate every exposed surface of the substrate.
The substrate may be patched with freshly pasteurized substrate(or casing) but is not required.  As may be inefficient in some situations.  The fungus will need additional time to incorporate the new freshly pasteurized compost (or casing) and may delay fruiting until it has completely incorporated the new compost (or casing).  A thin layer of no greater than 1.5cm ( 0.6" ) (for casing) can be used as it should not delay the new fruiting by more than an additional 24-48 hours under optimal temperatures .  The ideal depth is half of this 0.75 cm ( 0.3" ) for new freshly pasteurized compost.  This method as described is ideal for compost grown mushrooms today.

Can I just cut the mushrooms off at the base instead?
Yes you can just cut the mushrooms off at the base.  Many grower's opt to do this since it saves time instead of cleaning substrate from the bottoms of mushrooms.    Be sure to cut the mushrooms off at the base leaving as little of the mushroom left.  Also cut off and away any aborted mushrooms or decaying pins.  The humidity levels and substrate water content is important to allow the stumps to be reabsorbed into the substrate.
This is seen in many underground gardens as it is a time saver.

When harvesting by hand, I prefer to clean them off once fully dehydrated.
I use an old toothbrush to clean off the base of the stems.

I'm guessing you don't grow using horse manure as a part of your substrate.
Horse manure in the finished product can ruin a reputation.
