Obviously brewing doesn't mean as much to me as it does you. I'm having fun learning tho. And I'm also fun trying to figure out what your problem is lol. It really is pretty entertaining. Back to the link I provided earlier about ginger root having amylase enzyme. I think that is where I first heard of banana peels also containing the enzyme. My fermentation completed in 5 days, maybe it actually did work?

I'm glad were all having fun in this thread now.
So between reading this thread and the fact I left a gallon pot of fruit I was suppose to homebrew in my kitchen and forgetting about it for 1.5 weeks (and now its totally sour and kinda gross looking) I'm going to try and make a 5 gallon batch of vodka .

You should try a nice sweet mead. Its a different flavor and one that used to be loved, just get some nice honey and some water and there you go. I have had it come out of a 5 gal carboy when it popped the airlock hit the ceiling but it was one of the best brews ever. Do you have a hydrometer to check your alcohol content?
