What's concerning me is the smell and the fuzzy white stuff... cotton ball like. WBS (I didn't smell the jars ) -> Coir/Verm/Gypsum (1:1)

Mycelium looks good to me
Does it smell of mushy + sweet rotten apples. Its possible there's a bacterial contam inside the sub

Looks like cobweb to me... break out the h2o2, and give a light mist... If it starts to "melt" away then it's cobweb.... If so, mist the whole cobweb area just a bit, and then come back and do it a not her 2 or 3 times 8-12 hours apart... (honestly I'm just guessing at the times apart as I think I've seen both listed... do some searching engine work)
As your resolution kinda sucks though, it also might be beneficial to get a bit closer to a patch and shoot a pic of it... As I said it looks like cobweb, but to be honest it might just be the blurry pic.

Doesn't look like cobweb to me but you'll definitely know pretty quick if it is because it'll spread like wildfire.

Id disagree and advise against opening your tub to spray it with peroxide. The colonization of the surface looks great, however smells are BAD. Most "odors" are signs of bacterial infections. All you can do is continue to care for it, and to toss it out when it finally gives up.

You should only be smelling that mushroomy smell. Anything, sweet, sour or generally just funky is as previously stated, a sign of contamination.
If in doubt and if possible, isolate that tub away from your grow area until you are sure either way. The last thing you want is mold spores spreading around that could affect future grows.

The right side looks whispy and Grey to me... 
Either way, he clearly has already opened up his tub and if it does happen to be a bacterial contaminant then opening it isn't going to harm anything (although mold has its own stench to it and he didn't differentiate how it stunk...)
As I said before OP... A better pic would do a world of good.

I don't notice anything wrong. You still haven't described what you're smelling though. An earthy mushroom smell is normal and expected, as stated above.
Just keep the air exchange up.

It's still "consolidating"... should I put it into fruiting? I don't know, it doesn't have that mushroom smell... I can't really describe it. LIke musky?

Better to wait until you see a few pins starting to come up, before fruiting.
I wouldn't worry about "musky". Perhaps you're just smelling the ingredients in the sub.
I haven't used WBS in a while, maybe that's a possibility. ????

Not true for bulk.
Consolidating is for fruiting grains and PF cakes, which are very highly nutritious compared to bulk substrate.
FAE is the number one pinning trigger.
Don't smother the tubs at 100%.

Like I said above, fruit at 100% for best results.
If it smells weird, well, time will tell while it is getting fresh air.

I crumbled several brf cakes into cow poo couple weeks back, about 7 days later I checked on them when I lifted lid on the container smelled like I dont know vinegar or something, but they still looked good so i went ahead and put them into fc, kept rh at around 94, temp around 72 and although they didnt produce a lot I still got a fairly decent flush off of them, now I'm a noob too, but it seems as though appearance is more of what you should go on as opposed to odor.

That was considered the case for a long time.
But there has been a lot of discussion over the past few years about consolidation.
Consolidating is needed for high-nute substrates like PF cakes. The mycelium needs time to digest the substrate and it provides a better first flush in the end.
Bulk is much less nutritious than straight grains or BRF cakes. Experiments have shown (many of my own included) that bulk substrates perform better when fruited at 100%.
They may not pin faster than they would under colonizing conditions. But give it FAE at 100% and the first flush is much healthier. It will have fewer aborts vs a consolidated bulk in the same container.
I have run tests with isolates and the performance has consistently been better when I fruit bulk at 100%. I recommend you give it a shot

Wow, thanks! Adds up, the last time I read any mono/bulk teks was some years ago.
I certainly will give it a try, been meaning to start some new tubs for a grip now.
How about the "consolidate the jars for a week or so before spawning"...is this still good practice?

I'm not sure if that was good practice before or not, but you'll get the best results if you spawn to bulk substrate at 100% while the mycelium is still growing rapidly 
Another good technique from recent times that has been giving many people good results is rehydrating the fully colonized grains before spawning them.
There is about 50 pages of good discussion on the topic here too.
It speeds colonization time along quite a bit

I like the re hydration idea. I had one of my bulk casings seemed to slow down after 2nd flush so I simmered some dry dog food in pond water, allowed to cool then injected my bulk casing about 2 days later it started fruiting again.
