Are these oysters ready? I just don't want to wait too long to pick and end up with spores all over.

The edges of the caps are turned up... They are dropping spores already! Pick pick!!! The ones in the middle/lower down look premium...
After eating Oysters at different stages... I definitely prefer them just before the edges of the caps turn up.

I picked the larger front array . . . weighing in at 1.25 lbs. I put them in a large, UNzipped baggie in the refrigerator. Is this what's recommended?
Ugggghhh I should have picked earlier. I cranked my air purifier on in the room.
So it's okay to eat the spores but just not a good idea to breathe them in? The whole spore thing has me confused/concerned.

Spores are what make up a lot of the mushroom. You will lose weight if you let the spores drop. I have read the spores give the mushroom a lot of it's flavor... That seems to be the case in my experience. Some people are really allergic to the spores, and some are not.
Paper bags are great for mushrooms if your just eating them yourself. Otherwise, paper containers covered with micro-porous plastic film are good for sale. Open plastic bags tend to dry them out too much.
I am selling some next year at the farmers market once production goes higher than what I can eat... I am going to keep them in a cooler in paper bags and have a few microporous film wrapped containers for display/later sale.

i never heard spores make up a noticable portion of the mushroom mass, or that they add flavor. i just thougt they lose flavor just like they lose potency with cubes, because the usefullnes of the mushroom fades as the spores are lost.
but yeah, you can develop a serious allergy from inhaling too many spores (mainly oysters)
they look great by the way!

I would not store them in plastic. Even if the bag is open, you will get some condensation on the sides of the bag, it will wet the mushrooms and you will get bacterial rot in a few days. If you put them in a paper bag, they should last at least a week. They will eventually dry out, but they will still be useable and at least they won't rot.
