Yeah, I know this is the wrong forum,but I wanted to be nice and give some of you serious mushie growers a heads up. This might be missed if placed in the pub.
Anywho, there's a nice 41 qt all american pc on ebay. it has 10 days to go. It's way too big for me, but maybe not for you.

I just bought one new at appliances.com for $300 w/ shipping. It will cook 20 quart jars at a time, but you will have to cook it longer. And with longer cooking time, moisture level should be adjusted. I heat it up on the front and back burner at the same time and then move it to the front burner. In order to keep the pressure at 15 I have to leave the burner on med-high. I've only cooked one batch in it. I cooked twenty jars for an hour and a half, cooled, removed two jars from top middle and then cooked the rest for another two hours. They definately do not look to wet; however, I am worried that they are too dry. They sat for a day or two before receiving agar inoculations and no contams had shown up in any jars. I did my agar inoculations in a poor mans glove box.

Why would they dry out? The All American's form a seal upon reaching pressure. No water loss or air exchange happens if you maintain the pressure properly. You could cook them for 10 hours, it wouldn't do anything except cook the grain. The steam inside permeates everything thoroughly, the inside of the jars would reach equilibrium with the 100% saturated air outside and zero evaporation would occur. You shouldn't need to adjust the water content in your grain at all. This is not a rocker style cooker where this would be an issue. Keep the grain moisture content the same as if you were cooking 2 jars for 30 minutes, even if you are cooking 20 jars for 3 hours.
BTW, 90 minutes should suffice for 20 jars at 15 psi. You only run into trouble with tightly packed items such as spawn bags or bricks of sawdust. Jars allow free circulation of the super heated steam. Standard times apply here, for 1 or for 20 jars.

Actually, the unit is a pressure cooker/canner. It uses a weight. When the pressure is more than the weight allows, it releases steam. But anyway, thanks for the advice on cooking time. The two jars that came out at an hour and a half did not contam in tow days, however, the unit is so large I really cannot intuitively say the same thing about a jar randomly selected from a different region inside the cooker.
If anyone is considering bidding, I do recommend it. I've been watching eBay all summer long and this is the first one I saw. I bought this thing less the a week ago. I decided that I wasn't going to wait until one might show up. As I said, right now at www.appliances.com it is $289 plus shipping. It'll probably run you right around $300. This is nearly $60 than any other online vendor!
