Harvest as ready. There's nothing to gain by picking immature pins or leaving mature mushrooms there to sporulate.
Edit: And by immature I mean not ready to be picked. Most cultivators actually pick them shortly before they're fully developed.

I've had trouble getting the pins to stay put when lifting off the big guys.
Also, the pins that did stay attached didn't keep growing. What's with that?

Actually not everyone was a noob. Being a noob is a very new phenomenon. Many people, the great majority in fact, were simply "beginners", "novices" or "new to mushroom growing". Being a "noob" is reserved, and in fact created specifically for and by, the newer, much more lame generations coming about. -Shpongle1

It's easier if you cut them off with something sharp. There's almost always some extra pins that won't grow during the first flush. Many of those will grow in later flushes, so dormant pins should not be harvested.

Not unless there is another problem with the tub.

Hrm. Yeah, now that I've got Xacto blades around the house I think I'll put them to good use.
Did my remaining pins not grow because I used the twist and pull method? I saw something earlier today that made me think it could have been because of the sporulation that was going on in the tub too. I really didn't get a second flush at all on that last tub >.>
So did I go wrong with the twist and pull, or from letting them spore? Both perhaps?

well there are no signs of contams. What could some problems that would cause them to rot? Just want to know for the future.

If you dunk them without having sufficient fresh air exchange to allow them to dry possibly. Although I'm not sure the result is actual rotting, it seems more like what happens to PF cakes during a dunk.
