MAKE YOUR OWN CHEESE (EASY)

I made some radical homade farmers cheese, it is so easy and I am excited to share:

Heat half gallon of organic whole milk or goats milk to 170F

Add 1/2-3/4 cup of vinegar or lemon juice

Turn heat off and stir gently

THE CURDS SEPARATE FROM THE WHEY

Spoon the curds into a colander with a coffee filter in it, and drain as much juice off as you can.

Salt and season to taste, will keep in the fridge for about two weeks. Works great unseasoned as your own ricatta in lasagna, wonderful in crackers.  The longest part was heating the milk without scalding it, gotta do that on lowish heat.

Simply delish.  Oh and the juice leftover, not the curds, but the whey..is literally whey protein, strain and drink for extra protein, or water your garden with it.

How do you get bacterially generated cheese?  I'd like to make some soft frenchstyle cheeses.  Smelly cheese.  Nom.

hey OP, have you tried adding salt when you add the acid? I found there.i get better yields that way, ive only done it a few times so im no means an expert just throwin it out. i know to make hard cheeses they use rennet to make nice curds then squish the fuck out of it in cheese cloth then bath it in salt water and age it. ive always wanted to try that out.

I started making cheese about a year ago.

Mozzarella/Ricotta are the easiest to make, but hard/soft cheeses are more than doable. Easier than growing shrooms anyways:grin:

New England Cheesemaking Supply has cheap kits for mozzarella and basic hard/soft cheeses(Brie Camembert, Cheddar, etc).

You need molds to shape the hard/soft cheese wheels. Soft cheeses need to be protected by a curd which is grown on the surface of the wheel. Hard cheeses are usually coated in wax before aging.

No but I will try adding salt. I got some goat milk and lemon juice...

If you're making a rennet-set cheese, the leftover whey contains enough protein that you can make ricotta from it.

By the way, does anyone here know of a cheap source of rennet (bacterial or otherwise)? I've seen it for sale at the hippie grocery but the amount needed to make a pound of cheese costs as much as just buying a pound of cheese, so I decided against and have stuck to acid-set cheeses for now.

Hi, nice topic!

I make my own tofu and have been thinking of doing some cheese at some point; sounds like mozzarella is the easiest.

Tofu's definitely tricky but I think I can do the cheese project okay.

I have always wanted to get into cheesemaking, but my Mrs wouldnt let me, claiming issues of smell. Well she's gone now, so I have been considering it to add to the list of shit I do for myself (brewing, edible mushies, breadmaking, chilli sauce making).

My interest is in the aged & mould cheeses - however as Im stepping up my edible mushroom production, I'm thinking that to introduce a deliberate mould source into the house may b asking for trouble.

For $6.50 you can get 10 rennet tablets. That will make you 40 lbs of cheese.
