We had 6.7 inches of rain the two weeks before picking these. Maybe that changed it

I've noticed that too. Seems like the southern and eastern chanterelles are a bit different from our western ones. They are different species, after all.

This look like the chants I found on the east coast. The false gills were also kinda big, but they're chants. Unfortunately I tried to dry the ones I found in the oven and didn't dry them all the way. They got mold within a week. :[

I heard Old Man of the Woods is not really great tasting. Not worth trying even, but that's up to you. I've never actually tasted it though.

@ Seekingtruth- Pick most any favorite pasta sauce to add chants to. I love them in all italian pasta sauces that I have put them in. They also have worked for me in gravy dishes because their slight fruity flavor counters a salty gravy really well in my pallet.
I wonder how it would work in biscuits and gravy? Put some in the gravy and fry a few strips in hot safflower oil till nearly dark golden brown and put them on top of the biscuits and gravy that already had chants that were cooked in the gravy.

I usually just keep them in a paper bag in the fridge... pickled is good too
