My first PC test today
    #18732832 - 08/20/13 03:16 PM (10 years, 5 months ago)

Well I was excited to test out my new PC because I have never used one. So I made up 5 brf jars today and tried it out.

I put my PC on the burner with 3 quarts of water and waited until the PC had a steady deal of steam coming out. Then I added the weight/rocker and waited until it hit 15psi and I waited an hour while it did its thing.

Upon opening the PC I noticed an unpleasant smell which smelled kind of like burnt flour? I looked at the jars and they looked a little different than the ones ive done in the past with just a regular pot.

Question...

1. Is 15psi for an hour too long for brf cakes?

2.  Like an idiot, I forgot to put a layer of aluminum foil over the extra jar lids holding my cakes up. Do you think too must moisture could have gotten into the jars because of this?

1. One hour at 15psi works great for brf cakes

2. As long as you had your jar lids covered tightly with foil you should be good

Was there still plenty of water in the pc when you opened it?

I would say atleast 2/3 of the water was still in there

1. No, in RR's videos he recommends 15psi for 90min.
2. I don't quite understand this one. Extra jar lids holding the cakes up? If you put foil over your jars, you're good.

Wrong he recommends steam sterilizing them for 90 min.

Right, but in the videos it showed him putting a layer of aluminum foil over the jar lids as well. My guess is because when the water boils, it also splashes up. But I had foil over my jars so all should be well

That is correct! I only heard "and people can still use their pressure cooker" and "steam sterilize for 90 minutes".

I believe he says that some people say that 60 minutes is enough for steam sterilization but he recommends a full 90 minutes.

I had no idea how long using a PC. And I figured 60min was plenty since it was a PC instead of just a regular pot

I've seen several recommend 60 min. RR and his "Let's Grow Mushrooms" is just an easy reference to turn to, everyone can go hear it for themselves.

I think he means he didnt put foil over the layer of jars on the bottom.

As long as the jars are not sitting directly on the bottom is should be fine, i dont think ive ever used a lyaer of foil. just jur lids, or a plate sometimes.

60 min @15psi is long enough for half pint brf cakes although 90 min won't hurt

Pressure Cooking

1. Place your trivet or metal rack into the bottom of your PC and fill with 1-1.5 inches of water.

2. Place your jars on the metal rack above the water line.

3. Follow your pressure cookers instructions to bring it up to pressure (15PSI) and let cook for 60 minutes.

4. After your pressure cooker cycle has finished turn off your burner and allow to cool overnight.

I've seen a couple others mention 60 minutes as well.

HAHAHA I wish that had been me today, but I was observing and making sure I didnt eff something up. I was watching the pressure guage and it got up to 15psi pretty quick, I thought I was gonna have to take the PC off the burner, but it stayed at 15psi very nicely

about the only way I can think of that causes you to burn your jars is either running out of water, the jars sitting right on the bottom, or you just have the heat too high. I've heard of people burning jars using a gas stove.

My quart jars just have a thin little spacer thingy that came with the PC. It provides about 1/4"- 1/16" space. I've never burned a jar. As long as there is a layer of water between the PC bottom and the jar bottoms, they shouldn't burn.

Depending on the filter, you may have got water in the jars. Water will rain down on your lids for sure. I always use foil over my jars, even though I use SFD's.
