colonized, broken up and cased substrate?

In a seemingly stable, but slowly decreasing dazed and high state of mind. I confidently took a fully colonized pan cyan spawned substrate bag,


(substrate being a mix of sheep shit, 1" cut straw, verm and a small dab of coco coir)
and prepared it like I had been doing it forever. I crumbled up the substrate bag, evened it out in the trays, covered with a thin layer of verm , and misted them well.



Then coved with foil and poked a couple holes on top.



Then the realization that I had never done this before kicked in.

Now i'm wondering...  did I even do it the right way, and how many days will it take till it's ready to remove the foil for FAE and pinning/fruiting?

I did pretty much the same thing with my cube trays, and they are starting to pin after 4 days, but I never covered them with foil.






My only reason for covering the pans is because I know they contaminate easily and i'm thinking the foil will block out most contams.

I'm guessing that if I just keep the pans undisturbed for about 4 days, they will be ready, like the cubes were. Please correct me if i'm wrong...
