Recent PC purchase question.

I'll preface this question by stating that I came across a similar thread on this website that hasn't been active in over a year and the information contained therein did not provide me with a suitable explanation to my problem so I figured I'd just start a new thread. Having said that, I recently purchased what I thought to be an All American 921 1/2 Pressure Canner from a private owner on Ebay. Upon arrival and inspection I noticed that this cooker has a pressure control valve indicative of a sterilizer. Could it be that someone just replaced the weight with the control valve? I'm not familiar with the older models so I'm just trying to clear up some confusion as to whether or not this is a sterilizer or a canner. Any All American experts out there got the scoop on this?

Well I'd like to cultivate so I would prefer to sterilize. The Sterilizer will pull a vacuum on cool down, which a pressure canner will not. As you can see, the unit in the photograph does not have a rubber blowout plug indicative of a sterilizer but it has the control valve. I'm thinking this was a canner that someone modified with a control valve for whatever reason.

I also notice that my cooker does not have the flexible exhaust hose that the sterilizers have.

If your just doing pf tek, steam will sterilize just fine. Even just a pot with a lid on it will do.

Well I would prefer to have more options than just the PF Tek.

Dude, it has a pressure gauge that goes up to 20psi, 15psi for 90 minutes is suggested (almost a law) to destroy bacteria and fungal endospores. I think your OK, just make sure the lid fits tight against the pot. Do a test run for leaks.
A simple look-up at new All American PC's, on the web, shows the exact same lid configuration.
A close inspection of the housing and lid fit should be a mandatory regimen before each use.

I appreciate the reply, but you're answering a question I didn't ask; I know that 15 psi will kill endospores and I know the basic function of the cooker. I'm simply trying to identify the cooker and see about some modifications.

Yes it does look moded.
I thought about doing this very mod myself to my own 921 but decided not to as I didn't want to walk away and accidently blow my pc... (though that could be due to my limited knowledge on how the release valve works...
Either way you should be fine, but I would have your gauge tested so that you can make sure it is functioning properly and keep an eye on it for your cooks...
If the valve works as I think it does, it will "lock" in the steam, not allowing escape (though I could be wrong on that) Either way if you would like the parts are available online to replace it with a rocker style. I've gotten good enough with my settings on the rocker that I can keep it up to 15psi with the rocker only going off once every 10-20 miniutes anyway. (Which is the plus of the control valve as it allows near silent operation... A rocker going off every minute was driving me crazy)

As BloodKil said, it is most likely a modified AA pc. I'd definitely stick with the toggle valve as it is right now. It's much better than the rocker. Makes no noise, you don't lose any water while you sterilizing and you can sterilize on higher PSI to cut down on time. Win!

Excellent guys, thanks. Does anyone know if I should replace the metal plug in the back with the rubber style blowout plug? Any advantage to this over the metal plug that's in it now?
