Yay, guess who got a pressure cooker... But how do I use it?

First of all, I'm not as naive as the title describes, i just have a few questions so i don't fuck up and have an explosion or something in my kitchen. Lol...

I got an 8 quart.. I know its on the small side, but I'm not made of money:thumbup:


First off

It has no pressure gage, just a top relase valve that rocks back and fourth...(see pic I'm pointing at)

1--How will I know what psi it's at?
and how to pasturize pf jars, straw, poo, whatever it may be ..

2--Since the psi gauge is unavailable, how long would you guys recomend i PC things for, to get the best pasteurization results?

3--what heat (gas stove) setting should i have it on?
I'm really excited:datass:


I'm basically just wondering what the serious do's and donts are, while PCing.

I know not to clog the vent, or ill die lol








4--The thing I'm pointing at is the thing that rocks back and fourth when steaming... Basically if its rockin, I'm good?

I have read the directions, i just didn't understand the mumbo jumbo.


Any help would be extremely appreciated, thank you guys:awedrugs:

Most of the time those top-rocker things are calibrated to about 15psi.

I have a similar PC that I use. Basically, you take the rocker off  (if you can) and heat the PC on High till steam starts coming through the hole. Let that go for a minute or two then place the weight back on. Keep it on high heat till the rockers starts going crazy (this usually takes several minutes for me). Once it starts rocking and jiggling, Start your timer, and drop the heat to about low. Your objective is to have a bare hiss of steam with 1-4 jiggles of the rocker per minute. You might occasionally have to play with the heat, so stay near-by preferably. Depending on the recipe you want to keep this up for 1.5-2 hours. Then kill the heat and let it come down on its own.

Good advice, except for that part I quoted.

Follow the teks or advice here.  You should never sterilize something more than an hour unless it's massive.  PF cakes should get 30 minutes, quart jars of grain 1hour.

EDIT: Suggesting a range of 45-60 min for quart jars was wrong, as IME 45 min does leave 5-10% incompletely sterilized now that I think about it.

Off topic in advanced mycology.

90 minutes at 15 psi should be used for quart jars of grains.  It can take up to 45 minutes just to get the interior of the jars up to sterilization temp.

Hey OP I can relate. When I got my first PC, I could not figure out how to use it for the life of me. I thought I was an idiot, and maybe I am, but I came to find out that it was missing the weight! As you might imagine, it was very confusing trying to figure out how to operate the darn thing.

Will it hold qt jars? I bought a 6 qt when I first got into this and it would only hold 4 pint jars. Or you could do 1 qt jar on its side. It took me all day to pc enough grain to spawn a tub. I finally ended up buying a big one that will hold 7 qts. Love it. 90 mins and done!

45 minutes will get about +90% sterilized.  1 hour has always gotten 100% IME.

Moist jars like we do will build up steam inside them.  Totally different than trying to sterilize something dry.  Convection inside the jar will help sterilize it faster than you might think by imagining standard heating methods.

As always, YMMV.  There's no advantage to sterilizing longer than it takes to get 100%, and it breaks down the material.  So find what works for you.  I suggest starting with 1 hour and going from there.  If you're new or really depending on a batch of jars and don't have time to tune your procedure then there's nothing wrong with going 90 minutes and working your way down over time.

15 vs 20 PSI, stove heating speed, altitude, how you time your PC, how hot you run it, type of grain, quantity and nature of endospores present, soak/steep method and times, etc., etc. will all have an effect on how long it takes to sterilize.  Regardless, most quart jars should take 60-90 minutes.  Going longer than 90 minutes is pointless though, and won't give you any better results.

LOL this thread is perfect. I just got my 23qt presto pc last week and I've never used a pc before so this will help me out  :thumbup:

I'm not trying to thread jack, but I read before about people using a weight or something with a pressure cooker? All mine came with was a pressure guage and the rocker?

that pressure coooker looks real small, you should get a 16-23 quart canner unless you just plan on doing like 1 jar at a time
