Yellow Liquid/Spots

Hello All,
I want to start by off saying thanks to everyone who uses, contributes, and helps people with the interesting hobby of mushrooms!
That being said, I want to preface this with, this is my first attempt at mushroom cultivation. I am using the PF Tek method. Strain: PE. I have followed everything outlined in the method thus far.
Most of my jars are 100% colonized, I am now waiting the extra 4-5 days then moving into dunk and roll, then the fruiting chamber. About two days ago I noticed the yellow liquid/spots that you can see in the pictures.
Only the jars that are 100% colonized show this spot/liquid, and where it is NOT present the rest of the cake is 100% white and healthy, as far as I can tell. I have done limited research based on the documentation and information available that this looks to be metabolites. These are produced by the mycelium to ward off possible contaminates, bacteria, temperature fluctuations, or stress. Is this correct? Can some experienced veterans please comment on my photos are well as my hypothesis? Also, if this is the case, does this effect the outcome of the grow and or health of the overall mushroom.
My other question is also, if these are metabolites, does this mean that the cakes should be dunked and rolled immediately or can keeping them in the jars for an extra couple days be OK?
I also do want to say I have seen several posts on this topic, but none seem to give a direct, conclusive answer with good detail and research. I apologize if I am posting something that has already been answered, but I could not find it.

The first pic looks like bacteria starting to form. The second looks fine to me. But thats only my opinion.

The yellow liquid it metabolites. Treat them like normal. They're sometimes produced for no apparent reason but if there is a reason it's probably that your incubation temperature is on the high side.
