steam sterilization

So I don't have access to a pc for this batch of brf. Already have jars in pot steaming. A few minutes ago I was reading not to let the water touch the jars. Why is this? I added an inch or so of water to the bottom of my pot like the pf tek says to do.
Am I fucked? As long as the jars have a good seal I don't see it being a problem. Also I don't have anything to put on the bottom to prevent the jars from sitting in water.

water can touch the jars but if you heat it up too fast your jars may crack from the sudden temperature change just put a towel down or you might burn your jars/substrate.

Btw the I've stuck my temperature probe in the steam hole on my lids and each pot stayed a steady 210.7.
So I really don't think I will end up burning my substrate...could just be my optimism shinning through.

If your jars are touching the bottom of the pot, then there's a good chance you'll burn your substrate. I hope it works out for you though.

Thanks bananas.
I took a peek and didn't see any signs of burning substrate. Would I be able to tell by looking? I would assume so.

You most likely wouldnt notice till it cooled or were able to look at the bottom. Gotta be careful not to disturb or get moisture on your dry verm barrier.

I took a peek at the bottom and havnt seen any signs of burning.
I went ahead and quickly put a towel on the bottom of each pot anyway. Hope it doesn't bite me in the ass Wish me luck.
EDIT: I believe I have a very good seal on my jars btw

Did you cover the lids with aluminum foil? The steam hole on your lids? You mean the injection ports on your jars or a hole on the top of the pot?

Lids and noc holes were covered with foil. With screw-on lid on top of foil. Burners have been off for almost an hour now. Will noc up tomorrow.
I had some extra sub that I put into a drinking glass covered only with two layers of foil and a rubber band I removed it from its own pot and put in freezer to cool quickly just for shits and gigs. Upon inspection I couldn't see any burnt sub. I also shook the glass a little to see if I could hear my dry verm layer shaking around..which I did. Going to noc here in a few minutes...in the name of science.
And tiger I meant hole on the lid of my steam pot.
