Screwed trays coming back to life

My trays all have bad genetics so when they fruit it becomes a popcorn matted mess.

However when I take them out of their tray and flip them they turn into this.

Does anybody know why I can't fruit the top but have no problems when taking them out of their trays? Once I flip them, they stop mutating. It seems to defy logic.

They seem to be knots or cap-less mushrooms. They instantly turn blue when you touch them. It certainly looks sick.

Have you got any idea as to why these blobs take over until there's no room to fruit? All of my trays are growing in this way and I don't understand how flipping promotes healthy fruits and stop blobs in their tracks.
It makes me wonder how they would have grown if I fruited them out of their trays to begin with. My guess is that they would have grown blobs on all 5 sides, destroying any hope for a decent harvest.

Probably same result. The blobs have a tendency to pop up early in first flush, with more normal pins growing later.

Ok that makes sense. I've got some more jars stored in the fridge and as they were all inoc'd g2g I know I'm dealing with the same genetics.
I'll keep fruiting them in their tray until the blobs have finished doing their thing and then flip them.
I originally thought all these trays were screwed so this is a nice surprise.
