hmm.. so would dunking in the fridge be bad? one meatloaf of cambodian infused mad bag cake is already in there...

It's not going to hurt it unless it gets too cold. Your cakes will be slower to recover however.

when i started pf style in 2002, dunking in the fridge was recommended to slow bacterial growth. i did rinse off the meatloaf well before i let it soak. how long of a dunk is needed? think 6 hours would cut it

Fully colonized cakes are contam resistant.

Plus you won't have a bacterial bloom in the water or on the cakes after 12-24 hours submerged at room temp.

I just start my water cold and let it sit overnight.

Fridge dunk is outdated info, but like I said it doesn't hurt :thumbup:

I would dunk for 12 hours, 24 is overkill but 6 is not quite enough IMO.

i do remember my pf cakes in 2002 not recovering well after fridge dunking. muchas gracias!
