sawdust spawn keeps on FRUITING!

Ok here's the problem. I'm trying to make up some Oyster spawn to be used for outdoor projects later on down the track...
I've tried a number of different recipes but they keep on pumping out invitro fruits at around 95% colonised! My grain spawn can sit fully colonised on my shelf for up to 2-3 weeks and look fine (a bit overgrown but grows perfectly)
I'm wondering if anyone else has this problem?
I'll be trialling:
-more woodchips in the mix -less water in the spawn
Any other thoughts on how to avoid massive amounts of invitro pins before the bags done colonising? I'd really like to know how spawn suppliers can provide bags of sawdust spawn without the problems I'm experiencing.

Temp fluctuations can cause fruiting w this species Also light, although not a key fruiting trigger, still is one.
Like with lions mane, total darkness even for grain jars because its so very sensitive to ANY triggers. You could try refridgeration at maybe 70% also. They continue to grow in the cold.

Potential contamination can cause premature pinning. Just a thought, I have never had a problem with pinning before it's fully colonized.

I have had constant issues with premature fruiting also, light exposure seemed to be the problem here.

hmm interesting...whats your recipe for sawdust spawn? straight sawdust or do you mix in woodchips? It could be a strain issue, or even water content but it's a real pain in the ass! I'd like to have at least a bit of shelf life instead of use it immediately or it pins!
Might alos be the CO2 levels in the bag as well. I use the tightest filters (T)

We use wood "mulch" basically taking downed wood on our property running it through a commercial wood chipper once then through a garden mulcher 3-4 times. It gives a nice mix of sawdust size to small wood chip.
If anything the smaller micron filters would reduce your chance for pinning as there isn't enough oxygen to initiate it.
Strain would be another factor as Aleon mentioned.

excellent points guys! I've got a couple other strains in the works, and a few different substrates colonising atm. we'll see how I go... thanks for the input
