Trumpets go best with dark meats and red wine, for me at least. Lamb with herbs, white wine and mushrooms can also be amazing! Some kind of cream sauce as well! But trust me, beef or venison and trumpets of death are a match made in the deepest, most decadent pits of hedonistic hell.

Made myself hungry as well... I'm going to sleep now, but I'm cooking myself beef goulash tomorrow! I so envy you for your trumpets! Their aroma is amazing! I'll have to make due with dry boletes.

And see, this is the funny thing about wanting and having. Our season here in GA has been amazing for chantrelles, but the boletes have been almost totally absent from the picture. I was really hoping to do some work with learning the different edible species, but they seem to like it a little drier than we've had. I just really haven't had the chance this year to taste what they have to offer!

I made a nice sauce! Ghetto, but awesome nonetheless. I took some onion and garlic, simmered in a little olive oil and butter, then, threw in the trumpets which were about 50% dry by the time I got back home. While all that was simmering, I took out some leftover pot roast from the fridge, and cooked that shit up with some taters. Now, into the pan with the onions, garlic, and trumpets, goes some heavy cream and milk in equal but unspecific amounts. Let that shit simmer on low for a while (until it was thick and creamy) added salt and pepper to taste, and voila! You have a lovely dinner for one triumphant feeling motherfucker. Cheers guys!

Mmmmmm...
