Should I be concerned about the extra water here? It's Ag Gypsum not food grade and I see it only has 2 h2o added but I just want to be sure it is ok to use....it's free. Thanks

The extra water's negligible.  Assuming that all the gypsum dissolves (which it doesn't), each kilo of it you add only adds ~200mL of water.  Plus, all gypsum is the dihydrate.

that's simply the proper chemical name or formula.  I guess that particular crystal lattice has two water molecules in it per...unit of something...it's been a while since chemistry class

if you have an anhydrous compound, it's going to start absorbing moisture from the air anyways.

Hi there,
Agricultural gypsum works perfectly for mushroom cultivation, and the water is of no consequence to you. The gypsum would have pulled that water in from the air not matter what since it makes the compound more stable. The compound you need to look out for in gypsum is magnesium. More than 2% can be detrimental to your mushrooms.
