My stove right now...

Right now, I have 23 quart jars cooking on my stove. The UPS man was kind enough to deliver my new AA 941 this afternoon.

GGMM says I can fill it and cook for 2-3 hours for complete sterilization.

And to be exact, there are only 20 in there. Three are in my old PC. The old PC that can actually fit inside the new one.

i preferm to use fractoinal just in case, but you'll probably get away with it. one major consideration is moisture loss. 3 hours will cause your jars to lose a fair bit of water if you havne't compensated beforehand.

I actually had a little difficulty preparing my grain. I followed the recipe for rye in GGMM. One quart being 200 grams rye and 220 ml water. My roommates and I did these last night and they soaked overnight. When I woke up this morning there was at least an inch of water on top of the grain in each jar. We fixed the problem by draining the jar using the lid to keep the grain from falling out. This wouldn't provide adaquate drainage so vermiculite was added by the 1/4 cup until no standing water remained. We decided to cook it for only 2 hours tonight. We'll kick one jar out (as a blank) and sterilize the other 19 tomorrow for another 2 hours. This thing takes a long time to heat up and on my gas stove it needs Medium High to stay at 15psi. I didn't time the heating up; however, my 8 Qt. PC was finished before I put the weight on.

the problem might have been that your rye has already taken in moisture from improper sotrage. rather that trying to drain you might try cooking further untill the exess water is evaporated.

I checked the jars after 2 hours and moisture content was visually acceptable. I checked the water level before PCing them again. Judging by mineral deposits, I lost an inch of water from warm up and 1 and 30 minutes of cooking. I took out the two jars in the top middle and am cooking the rest again now. I labeled the ones I took out. They will remain uninoculated. We figured out that this thing safely fits on BOTH front and back burner. It is now warming up for the second run.

Batman, you can search th web for All American pressure cookers/sterilisers.

I'm jealous, YidakiMan, thats a damn fine cooker. I may have to start saving.
