I can't see this being a good commercial species, the caps (the only edible part) are so little and fragile and easily fall apart. I guess the stems are woody, wonder if pressure canning would soften them up a bit for consumption like so many oysters.

Yeah pressure canning might work, I'd like to try something like that!
As far as common name, I think Terry decided it was the Tiger mushroom. So I'm inclined to agree But yeah I don't think they're common enough to have much of an official layman's name.

Young or old they are still tough. They are not woody like S75 woody more like soaked bamboo skewer woody. When I grow them again I'll probably dry and powder the stems.

That's my plan for today, I'm gonna harvest all the rest and dry those stems.
It's hard to tell when exactly these things are mature, the caps don't really turn up like a lot of mushrooms. They turn soft and rot very quickly after that, so you really gotta catch 'em in time.

I found some very fresh last fall and they smell and taste just like watermelon rind. Its weird. There the desert of mushrooms.

How did you guys prep them? Not sure what kind of seasoning goes with watermelon rind

just a pinch of salt. I always sear mine with just a touch of oil in a skillet to lightly caramelize then add about 1/4 C water and reduce to make a quick mushroom jus. I do this for all new species to get the full and most flavor. I think this would be great seared and cooled and used in a salad with feta, cucumber, red onion, and some nice greens and a red wine vinaigrette. Just me though. Everyone at work wanted a piece to try so I couldn't play around with it much as it went quick.

I grew these oysters from store bought mushrooms. I called the company who grew them, Monterey Mushrooms, and they said they grow grey oysters. My result looks more tan than grey.
Anyway I grew from stem butts in coffee grounds in a jar. I just added more grounds (filter too) every 2-3 days as I drank coffee. Got a full jar of mycelium and added it to a bag of straw.
