Do I need to flip the lids upside down if im pc'ing /w tyvek

I got the tyvek. Im getting the grain ready right now to put into the jars. Then I will pressure cook them with my new PC I just got at 15psi for 1 hour (or is that too long?). My question is: Can I keep the lids right side up so they will attempt the pressure seal but the holes with tyvek will keep the jars from pressurizing? Or will the tyvek not provide proper air exchange in the PC? I dont want to flip the lids upside down just becuase its more of a risk for contam... Right?

Don't use lids if you are using tyvek.

1. Take a square of tyvek and put it over the mouth of the jar.

2. Use the metal bands to secure the tyvek.

3. After they've cooled, inoculate right through the tyvek and seal the hole with masking tape.

Works great for me.

not any extra risk no. 15psi for one hour is goo, but you can add an extra half hour just to be sure. go ahead and turn the lids upside down, it keeps you from having to mess up your fingers tryin to get that lid off. its funny that you ask that cause i just got done doing that exact thing! its a small world after all i guess.

anyway, once you PCed em and the've cooled over night, just unsrew the lid, innoc as close to the rim of the jar as you can W/OUT taking off the tyvek, and srcew ONLY the band back on, trying your best to make it cover the little hole.

then put in a box or something and let them sit for a few day, after that check for any growth!

hmm ok ill just do it with tyvek and see what happens... If I get contams ill start putting the lid on top :\ wish meh luck!

Whats all this talk about lids on top? I've never heard of it. Do you do it to prevent water from getting in the jars? If that's the case...just use tin foil.
