Dunking your grains before spawning is fine. Do not use coffee it will contaminate.

well i simmer my wbs QUART jars with coffee and they all colonize in under two weeks using a MS syringe. Before, when i didnt use coffee it would take almost a month. but maybe i wont dunk them in coffee after they are colinized...

I use coffee for my WBS prep, but I would not want to add it to spawn that exposed to open air.

If you want the benefits of coffee (and the high risk of contam) you need to add spent grounds to your substrate when you prepare it (pre-pasteurization).
Once the grains have colonized soaking them in coffee will not provide any benefits. The mycelium prefers solid food; water is for hydration.
The acidity of the coffee could very well be detrimental to your mycelium as well.
Dunking before spawning will speed your colonization times. Give it a go. I believe my write up is linked above

spent coffee grinds should be used with your bulk substrate if your going to use it, however its hit and miss. works for some , others end up with green everytime they use it.
ive never used it. its not really needed but some like to use it (cant remember the reason) your grow will be just fine without out.
You can use coffee water to hydrate your grains.
As far as dunking your grains, ive started to dunk my grains for 10 minutes recently. No problems and so far it seems like the grains recover faster after spawning but ive not done enough of them to make a real comparison.
its well documented in franks thread and alot of people have said good things about it.
dunk your grains in water, the coffee isnt needed.
