Pressure cooker questions

Let's say I am pressure cooking for 2 hours and I have to leave the house in an emergency at 1hour into the cook. Can I shut it off then cook for another hour later in the day then add those 2 hours?
Also I am concerned about the water level in this small pressure cooker. I've never done a 2 hour session and I don't want it to run dry. Can I use the steam venting off as an indicator that there is enough water to be safe? If I have just a tiny little bit of water in the pc at the end is that ok or is there a certain amount of water that needs to be present?

if you have to shut it off might as well start over, and if there is water left over after pc and cool you had enough water

Well I'm sterilizing rye berries, If I start over I'm concerned about overcooking them. I don't know what will happen, just want to check with those who know, thanks.

Just to be clear, at 15 PSI only 90 minutes is needed. Also, it shouldn't be madly venting steam during the whole process. After I get mine to pressure, my stove is set on 1.5-2 out of 9. So medium low. Your's may be different, but it should just puff steam out every few seconds. (I like mine to be on the high side of that measurement because lower, I think, would be worse.
As for your question, just start over when you get back and see what happens. I feel like some nutrients might have some issues, but I am not 100% on that.
If you have 2 inches of water in your PC, no matter the size, at the right heat setting, you won't run out of water.

Right, 1.5 hours if you have a good pc, mine is a cheap one and only goes to 10 psi. They don't tell you that until you take it home and read the manual. There is no pressure meter on it so the only way I know it's hitting 10psi is if it blows off steam. So I heat it up and adjust the propane stove so that it blows off about every 2 minutes. I put in about 1 inch of water and it went through 2 hours of puffing and was puffing till the very end. I just opened it and it had 1/4 inch of water, so that was good.

Sounds solid then! The first one I got manage to get to 15 psi, and held plenty of PF tek jars.. but ONE quart jar.. I still agonize at times over my bigger one that holds 4 especially when pasteurizing..
