Well nothing is really ever exposed to open air. When I dump the substrate/spawn into my tub im basically in a tent. Just took a regular 4 tier greenhouse and didn't put the shelves in it, and I do everything in there

That sounds completely unnecessary and ineffective. Is it airtight? If not, it's not gonna do shit, and is still considered open-air. If it is, that's dangerous and you should never be in an airtight environment. If it's HEPA filtered air being blown in, it won't help much unless it's laminar flow.
Why don't you just pasteurize instead of all that?
