How long should i sterilize/pc my WBS jars?

I own a 50x All American Sterilizer... Right now I've got 13 pint jars and 1 quart jar of WBS, sitting in my sterilizer... How long and at what pressure should I cook them? I also put 2 3/4 inches of water in my sterilizer (just below the rack), is this enough....
... I used Doc34s WBS tek to a T. But I feel like 60 minutes at 15 psi for 14 jars isn't enough.
Keep in mind, if needed, I can turn my sterilizer up to 20 psi. I'm just unsure of what the best way is for WBS pint jars

I've always used 15 psi for 60 minutes for jars (up to one quart).
If you do not think that is enough, go 15 psi for 90 minutes. Plenty of people do.

20 PSI is the max for sterilizers. I run mine at 17-18 PSI, it will fluctuate a bit. For a full run, I go around 75-90 minutes.

I hear stories of people getting mushy and dry jars... Wtf are they doing wrong to make that happen? I don't want to make those mistakes. Sounds like a water problem

That's a grain prep issue. Not a sterilization issue.
Edit: Unless you're sterilizing for 6+ hours. Then I could see mushy grains.

I go 90 to be sure an extra half hour ain't a big deal to save me all the heartache of contams

I always do my jars for 90 minutes, though I've not had significant issues PCing them for 60 instead. Better safe than sorry IMO.

Well i just pulled my jars out of the pc after 90 minutes of 17-18 psi... it almost got up to 20 for a minute or two but I lowered the temp asap. The jars dont look alot like what I was expecting... I was expecting alot seeds sticking together and alot of moisture but the seeds actually looks quite a bit drier from than they started out as... Is this normal? I mean there is moisture in them but the seeds look a little cooked lol

Sounds normal. Rye can look pretty dry when they come out of the PC. Did you add gypsum during the prep? That would explain why they aren't sticking together (and that is a good thing!)

They have sat for about 5-10 minutes outside of the pc... Looks like moisture is returning to the seeds. And heck yeah I used gypsum... It's like 5 dollars for 20 pounds

It's fine if it gets up to 20. Once you find that sweet spot on the heat setting dial mark it w/ a sharpie or somehow. That way next time, you just set it to that heat setting & set & forget, once you've vented the hot air inside. Just like a Pressure Cooker, don't vent the hot air inside early. Just let it cool to room temp. Once it's cooled, you want to slowly vent the Pressure still inside the sterilizer. If you want, you can move the entire unit into your clean room before venting. Then vent in your clean room. That way the exterior of the jars are still sterile in your clean room. Oh, and to avoid confusion, please stop calling it a PC, because it's not. It's a sterilizer.
