I know if you can in metal cans you can just quick cool or open the valve.

I believe that the problem with "quick cool" methods is that they can also alter the moisture content of your jars. At least that's what I've heard RR say.

I'm new to the whole PC (just got my first!) but I've read the instructions like 6 or 8 times now and my instructions say specifically how to load your PC. It says to use the bottom rack and that jars can touch or stack and no barrier is needed. It even states that a rack is not needed between stacked levels.

So what was your conclusion after a year? that glass can touch? I was thinking just wrap them completely in tinfoil

After I take a pressure cooker off the stove should I let the jars cool inside the pc or is it ok if I take them out and set them on the counter?

how long does it take for the jars to cool in the pc. 2 hrs til room temp?

Room temp is the best. I'v been known to remove the jars from the PC just an hour after they've been sterilized. Definitely let the pressure drop on your cooker before opening it to remove the jars.

is it ok for water to be touching the jars inside the pressure cooker and how many inches should the water level be? Ive heard raise the level so that the water is halfway up the jars, is that correct?

The water can come an inch or so up the sides of the jars.
There should be enough water in the PC to do a 90 minute run.
In my mirro 22qt I average about 2-2.5" of water.

If they're just touching then it's OK. However, if you have to wiggle them into position because they're tightly touching, then they absolutely will break. The jars have to be able to expand as they heat up, and this takes a bit of room.
You might have also dumped the pressure at the end of the cycle rather than letting it slowly return to zero psi over a period of half an hour or so. RR
