I got a couple filets in the freezer.

What should I do?

make some cornbread. when cooled, crumble the cornbread.

in a pan sautee some onion, green peppers, garlic, green onion all chopped up small. once they sweat and soften add this to the cornbread in a mixing bowl, add some chicken broth to moisten the corn bread mixture by just a little bit. Add some crabmeat, cayenne pepper, salt to taste and any fresh herbs you like to taste, mix lightly being sure not to break up crabmeat too much. Take you catfish fillets and season both sides with creole seasoning, then take some of the stuffing and place it on one side of the fillet and roll it around the stuffing. place the catfish rolls stuffing side up in a baking pan (like the barrel of a gun) drizzle with melted butter and bake in a preheated 350F oven till the flesh of the catfish flakes easily and you can see some of the white protein being exuded from the flesh.

after you roll up the fillets turn them so they stand up like a beer can, with circle of stuffing standing up. place them closely together in a baking pan so they don't unravel when baked. you can also just use toothpicks to hold them together

do it dirty south style. soak the filets in milk for a n hour or so. Roll in corn meal and fry in oil. The thinner the filets the better
