he says to place the digi therm into the middle of the bag and set the temp to 96F then turn of the heat and wait for the temp to hit 140F. once it hits 140F i set the timer for 75-90 minutes. is this correct?

Turning it off at 96 is just a guideline, everyone will have different cooking pots, stoves, and jars/bags.  Use that as a guideline and just make sure your monitoring the temps yourself the first couple times you do it.

I have 2 pressure cooker, one smaller and one bigger. The smaller one takes a lot longer to reach 108 then the bigger one. I put mine at medium temp because higher then that I'm almost guarantee ill have to empty the water haft way so the temperature doesn't go over 165. But 108 is the point I turn it off the big one, and i turn off the small one at 115-120ish.

im using a 32qt pot with a basic lid. i have the therm set to 140 and once it hits that ill shit off. i cant afford a pressure cooker...

well your definetly gonna have to babysit it without a pc.  pcs are well insulated and hold heat well so after certain temp is achieved you can put lid on and set and forget

the lid seems to be fine and the internal temp is slowly rising. its at 101 right now. in 10 minutes it increased by 5 degrees.

understood, but your probably going to constantly have to turn heat on and off to hold it at around 160

damn, this shit takes awhile to reach 140F. its only at 118 and its been boiling for a good 30 minutes.

it finally hit 140 at 410. its 435 now. thing is, the temp keeps rising which i figured it would. is there a too hot temp i need to watch out for or will it take natural effect and eventually cool down on its own? im sure as hell not worried about it dropping below 140 any time soon...

I suppose you could overshoot it and sterilize some or all of your substrate which would be bad. It says in franks tek though

If the temp goes over 165-170 for more than a few minutes, you will sterilize part of the substrate. It'd be best to toss it and try again. Since we spawn to bulk in open air, a partially sterilized substrate is just as shitty as an unpasteurized substrate.

you heat your water to around 180 and shut off the heat and then the temp should hit 140 start your timer and dont let it peak over 160ish for an extended period of time

No one should be watching the water temp, just the center of the substrate.

When the center of the substrate hits 135-140ish, you should turn off the heat and it will slowly crawl up to 160ish and should hold there for an hour to 90 minutes.

Then you have pasteurized the substrate.

If it goes above 165-170F for an extended period of time, I would start over.
