thats exactly what i did, but the temp kept climbing. i had the stove on med and once it hit 140 i turned it off. then it climbed up to 185 and sat there for a good 35 minutes.
how do i keep the temp from rising?
ill start over tonight once my chick gets here with the car.
this sucks...

Start with the heat lowered even more than medium.
It might take you a few times to get it just right.

alright, ill try medium low tonight.
so whats best way to go at this so i dont fuck it up again? what can i do to drop the temp in case it starts to reach over 165? i can set my therm to 165 so ill know right away.

Pasteurization is a kind of sanitation but not sterilization. It just reduces the amount of pathogen in the substrate so it won't be overcome nearly as fast by nasty as the intended culture. If you sterilize however then you have produced a place where the nasties can compete way more efficiently and will overcome your indented culture.

This is what works for me:
I put the temperature at 5. I wait for the temperature of my substrate to reach 110, then I turn it off and put the lid on top. Now the tricky part is to stay around your kitchen the whole time. If it reach 155 and it's still going up semi-fast, I know it will go above 165. So to avoid the temp going up, I empty the water. The temperature of your substrate will keep going up, but it wont go above 165. Make sure to put water back in at around 30min, and HOT WATER. NOT cold water, your jars will break :S
I hope that helps. Obviously if the temp isn't going up fast enough, put it back to medium for ~5 minutes

well my second go actually went pretty well. i had to fuck with the stove a lot as far as turning it off and on, but i was able to maintain a constant temp of 144 for a good hour and 20 minutes.
if you check my log, you will see pics.

well the more u do the more u'll get used to it and eventually u will know exactly what temp works for u. It's fun when u can just leave it there without having to worry about anything for the whole time

It's worth it once you get the hang of it. You should check out Frank's grain soak tek thing before you spawn to bulk. I just followed both his pasteurization and that tek and my bulk tubs are ready to go after 5 days. Really nuts.

Pretty sure 180F is the temp you want your water to be when you turn down the heat.
