Question for Fungi experts

I grow  lots of salad vegetables and notice that in  my pots and trays fungi sometimes grows alongside the plants ( rocket, coriander, lettuce etc).

I was just wondering if there was any way in which potentially toxic mushrooms could contaminate the leaves through the water/soil? Or by touching them. Could death caps appear under lettuce/rocket plants?

This is of some concern to me before I start to harvest my salad leaves.

None whatsoever. Only way a mushroom could poison you is if you accidentally pick and eat it with the salad.
If by 'death caps' you mean Amanita species from the Phalloidae section, then no, they are mycorhizzal and grow alongside certain trees. Only potentially toxic species I can think of growing in soil are some Conocybe and Pholiotina.

You're fine as already said.  There's thousands of species of fungi in the soil.  A healthy organic garden wouldn't grow without them.

plants like the carbon monoxide the mushrooms and mycelium give off, and the mushrooms like the oxygen the plants give off.

It's carbon dioxide, CO2.  CO is what kills people if they leave the car running in the garage.
